Chicken and Cilantro Quesadillas

Here is another of our favorite recipes in our house. Quesadillas!! This is such a simple recipe.

2 chicken breasts
1 cup salsa (I use Pace)
1 tomato
1 bunch Cilantro
Olive oil
Shredded Cheese
Sour cream (optional)
Hot sauce (optional)
Cut the chicken into small chunks and cook thoroughly in skillet with a little olive oil (about a teaspoon). 
Put the tomato, salsa, and cilantro into the blender and puree. 
Add the salsa mixture to the chicken and cook on medium for about 2 minutes. Pour a very little amount of olive oil on each side of tortillas and spread around. Spoon 2-3 spoon fulls of the chicken and salsa mixture onto one half of the tortillas. Add a little cheese on top. 
Fold over other side to cover chicken and cheese. Continue until out of mixture. 
Cook in the oven at 350 degrees for about 10 minutes or until shells are getting crispy. 
I add a little hot sauce and sour cream. YUM!!
